What Is Premium Freeze-Drying?
Freeze-drying is a food preservation method in which water is removed from a frozen product under reduced pressure. The process makes it possible to obtain a lightweight, crunchy product with an intense flavour and aroma.
However, the technology alone does not guarantee top quality.
Whether we are dealing with premium freeze-dried fruit depends on the entire process:
fruit quality → harvesting time → raw material preparation → freeze-drying parameters → quality control → packaging → storage
This is why at Lioforte we talk about premium freeze-drying, not simply freeze-drying.
1. The Best Raw Material – Polish Fruit from Organic Farms
The most important principle is simple: you cannot produce a truly high-quality freeze-dried product from poor-quality fruit.
That is why at Lioforte we start by selecting the right raw material.
Our fruit comes from Polish farms. Most of it is sourced from certified organic farms. We also obtain raspberries from our own plantations. This gives us even greater control over the fruit’s journey from cultivation to the finished product.
We carefully select varieties specifically for freeze-drying. Not every variety that tastes great and offers excellent quality when fresh will perform equally well after freeze-drying. Choosing the right varieties requires knowledge and expertise that we have developed over many years.
2. Fruit Harvested at the Peak of the Season
A high-quality product begins long before the production process itself.
The time at which the fruit is harvested matters.
Fruit picked at the right stage of ripeness has an intense flavour, aroma and natural character. This is why we aim to use fruit harvested when it is at its best.
This is especially important for berries and other soft fruits such as:
- raspberries,
- black raspberries,
- strawberries,
- sour cherries,
- currants.
Freeze-drying is intended to preserve as much as possible of what a high-quality fruit naturally has to offer. Cutting costs by compromising on the quality of the raw material goes against this principle and at Lioforte, we do not compromise on fruit quality.
3. Double Quality Control
High quality should never be a matter of chance.
That is why at Lioforte we inspect the fruit both before freeze-drying and after the process has been completed.
The first quality check allows us to assess the raw material before production begins.

4. Our Own Production Facility
Another important part of our quality philosophy is having our own production facility.
We do not outsource the freeze-drying process. Why does this matter?
Because in-house production gives us full control over the process and its parameters. We can consciously manage every stage instead of handing over one of the most important parts of production to an external supplier.
We know what happens to the fruit from the moment the raw material arrives at our facility until the finished product is ready.
5. Up to 16 Hours of Freeze-Drying
Can freeze-drying be done faster? Certainly.
Do we want to speed up the process at all costs at Lioforte? No.
Our freeze-drying process can take up to 16 hours.
We do not take technological shortcuts simply to reduce production time and lower costs.
When it comes to high-quality food, time is part of the process, not an obstacle to it.
For us, premium quality also means patience.
6. Low and Carefully Controlled Fruit Temperature
One of the most important aspects of a correctly conducted freeze-drying process is precise control of its parameters.
At Lioforte, we pay particular attention to maintaining a low fruit temperature and controlling the process parameters throughout the entire production cycle.

7. Freeze-Drying Without Microwaves
This is one of the principles we consistently follow at Lioforte.
We do not use microwaves to additionally dry our fruit.
The Lioforte premium freeze-drying process is carried out without the use of microwaves.
Why does this matter? Because freeze-drying conducted at a low temperature, without artificially accelerating the process, is designed to preserve what is most valuable in the fruit:
- high nutritional value,
- natural flavour,
- intense aroma,

Microwaves can shorten the process and reduce production costs, which is why some producers use them. We do not.
Research indicates that a properly conducted freeze-drying process can preserve a very high proportion of the nutritional value of fresh fruit. The key is careful processing without unnecessary technological shortcuts – exactly the approach we follow.
8. 100% Fruit, Zero Additives
The fruit we freeze-dry speaks for itself. It does not need added sugar, preservatives, colourings or artificial flavour enhancement.

9. The Conversion Ratio – How Much Fresh Fruit Is Behind the Freeze-Dried Product?
The conversion ratio indicates how much fresh fruit is required to produce a given amount of freeze-dried fruit.
In simple terms:
higher conversion ratio = more fresh fruit used
more fresh fruit = greater flavour concentration and more fruit in the finished product
Manufacturers are required to provide information such as ingredients and nutritional values on product packaging, but the fresh-to-freeze-dried conversion ratio does not normally have to be stated.
We provide this information because, for us, transparency helps customers make informed choices.
For example, the conversion ratio for our freeze-dried red raspberries is approximately 1:7. This means that producing 100 g of Lioforte premium freeze-dried raspberries requires an average of approximately 700 g of fresh raspberries.

You can carry out the freeze-drying process perfectly and still compromise the final result through improper storage. Why?
Because freeze-dried fruit absorbs moisture very easily.
And moisture means losing one of the characteristics people value most in freeze-dried fruit – its distinctive crunchiness.

- protect the fruit during storage,
