WHICH FREEZE-DRIED FRUITS WORK BEST IN CHOCOLATE MAKING?

We asked Krzysztof Zamczyk which freeze-dried fruits work best in chocolate making. Krzysztof is a chocolate artist, founder of the La Chocolic brand, teacher and educator, and creator of the Sweet Masters School – a confectionery academy project at the ZDZ School Complex in Kielce.

“In my opinion, the freeze-dried fruits that work best in chocolate making are those with an intense flavour and aroma. Freeze-drying concentrates the fruit’s natural taste, so the more distinctive and intense the flavour of the fruit, the better it will perform in chocolate products.

Freeze-dried fruits can be used in chocolate making in many different ways. They can be used whole as inclusions in chocolates, added to fillings or coatings, or ground into powder and incorporated into the chocolate mixture. It is also important that freeze-dried fruits retain most of their vitamins and nutrients, which makes them an attractive ingredient for consumers looking for healthier alternatives to traditional sweets.

Freeze-dried fruits are also extremely versatile. They can be used individually or combined into blends, giving manufacturers the opportunity to create unique flavours and original combinations.

To sum up, freeze-dried fruits are an ideal choice for chocolate making due to their intense flavour, the preservation of their nutritional value, and the possibility of creating a wide variety of flavour combinations. They are a product of the future in this industry, allowing chocolatiers to experiment creatively with natural ingredients and respond to the growing consumer demand for products that are both wholesome and full of flavour.

When selecting freeze-dried fruits, I consider several key factors. First and foremost, I always pay attention to the quality of the product, its origin and its ingredients. In the case of Lioforte premium freeze-dried fruits, I am confident that I am receiving products that are 100% natural, contain no additives and come from non-industrial Polish farms and trusted processors. This gives me the assurance that I am working with high-quality, locally sourced and environmentally friendly products.

Most importantly, Lioforte premium freeze-dried fruits retain almost everything that is most valuable in fresh fruit: vitamins, minerals, nutrients and biologically active compounds. This is extremely important to me because, as a confectioner, I focus on using natural and wholesome ingredients in my products.

From a technical perspective, however, what truly distinguishes Lioforte fruits is the fact that they retain the original cellular structure of the fruit. I receive fruits in excellent condition, without damage or hollow interiors.

Lioforte blackcurrants are a perfect example. They are fully filled on the inside, which sets them apart from products supplied by other companies I have previously worked with. On more than one occasion, after purchasing blackcurrants from other suppliers, I discovered that the fruits were hollow inside, damaged or broken.”
